Dental Caries and Growth in Rats Fed Whole-Milk Powders with Increasing Lysine Deterioration

A series of whole-milk powders with increasing lysine deterioration was prepared by intensifying the heat treatment during roller-drying. Lysine availability in the powders was measured by in vitro digestion. Diets containing 40% of these milk powders were fed to young rats, and caries incidence and growth determined. No relationship whatsoever could be found between caries incidence and lysine deterioration, whereas growth was progressively reduced as lysine deterioration increased.
