The Pyridoxine Content of Fresh, Pasteurized, Evaporated, and Dried Milk1

1. The pyridoxine content of cow's milk has been investigatedand an average value of 0.67 mg. per liter has been found forfifty-eight samples.
2. There were no significant losses ofpyridoxine in the preparationof the pasteurized evaporatedor dried milks assayed.
3. On a dry basis milk compares favorablywith cereals in pyridoxinecontent and contains one-half toone-fourth as much as mostmeats.
