Quantities of methionine (M) and cystine (C) in diets fed to weanling rats were modified to provide four levels of total organic sulfur (S) between 0.150 and 0.075% of the diet in three ratios with respect to source of S, namely, 70M:30C, 50M:50C and 30M:70C. Both level of organic S and ratio between methionine and cystine significantly influenced food intake, weight gain, carcass nitrogen and concentration of hepatic choline and nitrogen, but only the ratio between the S-acids altered liver lipid. Interaction between level of organic S and ratio between methionine-S and cystine-S was significant for food intake, weight gain, weight of liver and concentration of hepatic choline and nitrogen. The 70M:30C ratio was superior to the 30M:70C ratio at all levels of total S whether or not choline was provided, but the 70M:30C ratio was superior to 50M:50C only in the absence of dietary choline. Therefore, the relative amount of each S-acid in the diet of the growing rat must be considered as well as the total quantity of organic S and the adequacy of dietary choline. Added inorganic S did not significantly influence any of the above parameters.
